Ingredients
8 graham
crackers-crushed to make 1 ½ cups crumbs |
3/4
cup firmly packed dark brown sugar, divided |
4
tablespoons butter, melted |
1
can (15 ounces) pumpkin puree |
1
1/4 teaspoons cinnamon, divided |
1/2
teaspoon salt |
1
quart vanilla ice cream, softened |
1
can whipped cream |
Prep
Time: 15 minutes
Freezing Time: 4 hours

Directions
1.
Combine graham cracker crumbs, 1/4 cup brown sugar and butter in a medium bowl
and mix well. Press crumb mixture onto the bottom of a 9-inch square baking
dish.
2.
Combine pumpkin, remaining brown sugar, 1 teaspoon cinnamon and salt in a large
bowl and mix well. Stir in the vanilla ice cream. Spoon pumpkin mixture on top
of crust in pan.
3. Freeze,
covered, until firm, 3 to 4 hours. Top with a squirt of whipping creme and
sprinkle with remaining cinnamon.
